Local Chef Ban Nong Krathing, Chachoengsao

Kajanurak Ban Nong Krathing Village and Kajanurak Ban Khlong Mahat Village in Chachoengsao province are located in the forested border area of eastern Thailand, overlapping with the natural habitat of over 400 wild elephants. These villages are currently facing the challenge of dwindling water and food sources for the elephants, which has led to elephants leaving the forest and entering local agricultural areas, causing damage to crops and property.

In response, Krungthai Bank initiated the VVE Vayu Volunteer program, encouraging volunteers to plant more than 3,000 elephant-unfriendly, unpalatable crops such as galangal, lemongrass, Siam neem tree, and acacia in community areas. The strategic planting of these crops, which elephants dislike, creates a natural barrier between the community farms and the forest. At the same time, elephant-friendly, palatable plants are grown in natural forest areas to encourage elephants to remain in their habitat, fostering a balance between humans and elephants for sustainable coexistence.

Additionally, Ban Nong Krathing Village in Chachoengsao is known for its famous dish, Mee Krob Paed Riu, a traditional Thai crispy noodle dish. This delicacy promotes the use of local ingredients and preserves the unique character of ancient Thai cuisine. Passed down through generations, Mee Krob Paed Riu is a popular snack, side dish, or special gift for elders and loved ones on important occasions, reflecting the culinary heritage and wisdom of the community.


Mee Krob Paed Riu is a delightful combination of crispy rice noodles and rich, flavorful seasonings. Each bite offers a harmonious blend of tangy, sweet, and salty tastes that coat the noodles in a vibrant, enticing sauce. The mild tanginess perfectly balances the sweetness and saltiness, creating a smooth and well-rounded flavor. A touch of spiciness is added, along with fresh coriander, green onions, garlic, and crispy fried shallots, enhancing both the aroma and intensity of the dish. The noodles, fried to a perfect crisp and coated in just the right amount of sticky sauce, deliver a satisfying crunch with each bite. This balance of crispy texture and the symphony of sweet, tangy, salty, and mildly spicy flavors makes Mee Krob Paed Riu a signature dish of the community.
