Chiang Khong, once a city, is now a district in Chiang Rai province. The name "Chiang Khong" originates from "Chiang," meaning city, and "Khong," derived from "Khra" in "Khra Racha," meaning the Mekong River, as the district's eastern boundary borders the river. The area is home to at least nine ethnic groups, including the Tai Lue, Lahu, Khmu, Muser, Hmong, Yao, Akha, Lisu, and Haw. Chiang Khong also boasts beautiful and historically significant temples, such as Wat Phra Kaew, which has ties to the Emerald Buddha. Chiang Khong is renowned for producing the famous Nang Lae pineapple, celebrated nationwide for its honey-like sweetness and its unique characteristic of not causing a stinging sensation on the tongue. This pineapple variety is incredibly versatile and can be used to create a wide range of delicious dishes, including pineapple fried rice, pineapple curry, spicy pineapple soup, and chicken in coconut soup with pineapple.
