Local Chef Ban Kok Krai Community, Phang Nga
Updated Date28 Oct 2024

Ban Kok Krai, a charming fishing community in Thap Put district, Phang Nga province, offers a rich blend of natural wonders and local traditions. This area is home to breathtaking natural attractions such as hot mud pools, mangrove forests, Phi Hua To Cave, and Red Crab Beach. These sites make it perfect for various activities like kayaking, oyster harvesting, and, most notably, the hot mud spa. This unique spa experience is only available during certain low tides, which occur just 10 days a month, when geothermal activity causes the seawater, sand, and mud to heat up. Locals believe that applying this hot mud to the body helps alleviate numbness. While enjoying the spa, visitors can also sip on Cha Khlu, a local herbal tea known for its health benefits. In addition to its natural beauty, Ban Khok Khrai is renowned for its abundance of natural resources, particularly its oyster farms, which are among the most famous in Thailand. The community has a long-standing tradition of using every part of their resources wisely. They have found innovative ways to turn discarded oyster shells into valuable local products, such as oyster shell scrubs and soaps, which are available for visitors to purchase as souvenirs.

Fresh Oysters with Condiments: Thanks to the ideal natural environment for oyster farming, the oysters from Ban Khok Khrai are firm, fresh, and clean, offering a distinctively sweet flavor that reflects their cultivation in pristine seawater. These oysters are perfect for enjoying raw, accompanied by a zesty local-style seafood dipping sauce. The dish is served with a variety of flavorful condiments, including spicy chili paste, crispy fried shallots, fresh Leucaena leaves, and a squeeze of lime. When drizzled over the oysters and eaten fresh, this combination provides an unforgettable taste experience that truly captures the essence of the community's culinary tradition.

Gaeng Som with Grouper and Green Taro: Gaeng Som, also known as Gaeng Leuang, is a signature dish of Southern Thailand, beloved for its bold and fiery flavors. This traditional dish is a favorite across all regions, combining the thick, firm, and naturally sweet flesh of grouper with a robust, spicy curry paste. The addition of green taro stems not only enhances the dish but also provides medicinal benefits, such as aiding digestion and acting as a diuretic. The stems have a crunchy texture, and their porous structure allows the rich, spicy flavors of the curry to soak in, creating an intense and satisfying taste in every bite.
